By training I am an historian and therefore naturally begin with the historical circumstances that created the Cognac we know today before providing a detailed description of the making of the spirit and an analysis of the rematkable changes seen in the twentieth century. But I start with history also because Cognac is in a sense a new-found-land, opened up by successive generations of explorers who gradually uncovered its unique qualities.
