Als Grundlage für die Essigherstellung können alkoholhaltige Flüssigkeiten, beispielsweise Wein, Apfelmost, Bier, Reiswein, auch Malzsud oder zuckerhaltige Flüssigkeiten wie Traubensaft dienen. Durch enzymatische Prozesse bei diesem Maischen wird Amylose in Malzzucker Maltose und Traubenzucker (Glucose) umgewandelt. Dabei entstehen auch andere Zuckerarten.
